Being from the South, the only proper thing to put on waffles is fried chicken.

So I put aside my dislike of fried eggs and had one on top of my burger tonight. It was amazing.

Come to think of it, every time I've had a fried egg on a burger, the yolks were solid. I think I need to try it with a normal sunny side up egg soon.

Don't peel the potatoes, just scrub 'em really well. Then boil 'em until they're soft and stick 'em in the fridge.
The next morning, slice the potatoes into 1/8" (3mm) thick slices, then fry them in a buttered cast-iron pan until they are crispy brown on both faces.
Remove them from heat, brush them with a bit more butter, then finish with some flake salt.
Mmmmm...
