Does anyone make scones?

So, the fella is all sad because his cafe discontinued cinnamon scones. So I thought I'd make him some since that's pretty much the only thing he treats himself to anymore besides a cup of coffee.

I could find some recipes online, I know, but I thought I'd ask around here first since there are some cooks. 'Anyone know a good tried and true scone recipe?

No scones, but here's something Finnish instead:

Runeberg tarts:



- 1 egg
- 150 ml (10 tbsp.) sugar
- 100 ml (6 tbsp.) light cream (10%)
- 100 ml (6 tbsp.) finely ground almonds
- 200 ml (3/4 cup) dry cake crumbs
- 150 ml (10 tbsp.) butter
- 150 ml (10 tbsp.) flour
- 1 tsp. baking powder


Decoration
- Raspberry or red currant jelly


Icing
- 100 ml (6 tbsp.) icing sugar
- 1-2 tsp. water or lemon juice
- Pink food coloring
Method
1.Beat the egg and sugar together until light and foamy.
2.Add the light cream, ground almonds and cake crumbs, then the melted butter; mix well.
3.Blend in the flour and finally the baking powder.
4.Pour the batter into prepared muffin tins and bake in a preheated 225° C (450° F) oven for about 15 minutes.
5.Let cool. Top each muffin with a dollop of jelly.
6.Combine the icing sugar with a little water or lemon juice to make the icing. Add a few drops of food coloring to obtain a "candy pink" color. Surround the jelly with pink icing.

You're welcome :) This is apparently a home-cooking version; the original recipe (as far as we can tell; the original tarts were apparently made from leftovers by Mrs Runeberg) also included dousing the tarts with arrack.

I make scones every now and then, but I haven't ventured from the basics (half plain white flour, half whole wheat flour) yet. I am currently enjoying fig marmalade to my scones and am looking forward to trying out some decent blueberry jam when I run out of the fig marmalade.

I will keep an eye on this thread though, to see how you more culinarly skilled make your scones. :)

I make the oatmeal raisin scones from the Joy of Cooking regularly. They're goooood.

I can copy it here if you like.
 
1 3/4 cups all purpose flour
1/3 cup granulated sugar
1/4 teaspoon salt
3/4 teaspoon baking soda
1 teaspoon baking powder
1 stick unsalted butter, cold and cut into small pieces
3/4 cup old-fashioned rolled oats
1/3 cup craisins or dried tart cherries
Zest of one lemon or orange
2/3 cup buttermilk
some powdered sugar

Egg Wash made of 1 large egg and 1 tablespoon milk or cream

Preheat oven to 375, with center rack. Line baking sheet with parchment paper.

In a large bowl combine flour, sugar, salt, baking soda, baking powder with a whisk. Cut in butter with a pastry blender (or two knives if you're feeling masochistic), until it looks like coarse crumbs.Add the oats, dried fruit and zest. Mix until combined. Stir in the buttermilk (adding more buttermilk if necessary for proper consistency) and mix just until the dough comes together.

Flour a surface, transfer dough, knead 5 times. Shape into a rough ball. Cut in to 8ths (triangles). Put on baking sheet. Wash with egg wash.

Bake 15-18 mins, checking centers with a toothpick.

Remove and turn on broiler.
Dust with powdered sugar, and return to oven. Turn constantly, until sugar is melted and golden brown. Be careful..sugar goes from "melty" to "burny" in a heartbeat.

Cool on wire rack.

Really awesome with clotted cream. (for US folks, clotted cream is not as gross as it sounds. It's like super heavy cream that's been solidified like butter, but without the US butter's slight fermentation tang. It's like a soft butter with a flavor similar to whipped cream)
 
My sister works at a place that makes great scones. So great that the Prince came ll the way here to try them.

I'll sk her for the recipe!
 
Carrot Raisin Scones

1 cup white flour
1/2 teaspoon baking powder
4 ounces unsalted butter, softened
1/4 cup granulated sugar
1 egg, slightly beaten, divided
pinch of salt
pinch of cinnamon
dash of love
1/4 cup milk
1/2 cup raisins
1/4 cup coarsely chopped walnuts
1 carrot, shredded

Preheat oven to 375 degrees.

In a small bowl, sift together the flour, baking powder and salt . Add butter, blending until mixture is smooth and well mixed. Add sugar and cinnamon and continue to mix well. Add half the beaten egg and all of the milk. Add raisins, walnuts, and carrot, and mix until well incorporated. Blend well to make a soft, somewhat sticky dough. Turn dough onto floured board and knead at least 5 minutes. Pat or roll dough into a circle about 3/4-inch thick. Cut dough into rounds and place on greased baking sheet. Brush tops of scones with remainding egg. Bake for 15 to 20 minutes, or until browned.

I usually get about 8 out of this recipe. This is one of those times where I would very much recommend doing everything by hand, so a quick tip before you begin. Take a couple ice cubes, and make sure your hands are nice and cold before you start kneading. Have fun!!!

From my sister, not sure where she found it:

Cream Cheese Scones

2 C. flour
2 Tbs.. sugar
2 tsp. cream of tartar
1 tsp. baking soda
1/4 tsp. salt
2 Tbs. butter
1 oz. cream cheese
1/2 C. chocolate chips or cinnamon chips
3/4 C. milk

Heat oven to 400°F. Combine flour, sugar, cream of tartar, baking soda, and salt in a mixing bowl. With a pastry blender cut in butter and cream cheese until consistency of coarse crumbs. Mix in chips of your choice. Stir in milk, just until dry ingredients are moistened.

Use a large scoop (#24) and plop on greased baking sheet. Flatten slightly; brush with milk and sprinkle with granulated sugar. Place pan in oven and reduce temperature to 375°F. Bake for 10 minutes or until lightly browned.

Yield: 12 scones.

On a related tangent, one of my favorite parts about my brief trip to Paris was the Scone Stands that were everywhere.

Much better than hot dog stands, I'll tell you.

Fuck scones.

Danish!

CRUST:
3 c. flour
1 tsp. salt
1 c. shortening
1/2 c. milk
1 egg yolk, beaten

FILLING:
6 c. peeled apples, sliced
1/2 c. sugar
2 tbsp. flour
1 tsp. cinnamon
1/4 c. butter
1 egg white, beaten

GLAZE:
1 1/2 c. powdered sugar
1/8 tsp. salt
1 tsp. vanilla
3 tbsp. milk

FOR CRUST: Mix flour, salt, cut in shortening. Combine milk and egg yolk; add to flour mixture. Roll out half the mixture on floured surface to fit 11 x 16 x 1/2 inch jelly roll pan. Place in pan. Arrange apples in crust. Combine sugar, flour and cinnamon; sprinkle over apples. Dot with butter. Roll out remaining pastry; place over cinnamon mixture. Brush pastry with egg white. Bake at 375 degrees for 45 minutes. Mix the powdered sugar, salt, vanilla and milk together to make glaze. Spread on warm Apple Danish.

On the same tangent, I didn't really go for the scones they had in Ireland. But there was this restaurant, Luigi Malone's, where they served the best chocolate cake I've ever eaten.

Well, I don't know if it was chocolate cake. It was thick and juicy and probably packed enough calories to choke a pachyderm. But OH MY GOD was it good with the dollop of whipped cream. It was like an oral orgasm with every spoonful.

Starbucks has the best scones. Hands down.

Cake makes me want to vomit. No offense to those that like birfday cake or anything, but I absolutely can't stand cakes. Especially what North is describing as a really rich chocolate cake. Maybe, maybe with like a liter of milk to slug it down...

While it doesn't make me want to barf. I will say I tend to fine cakes to be overly sweet. I personally prefer pie but even those can be to sweet if they are not made correctly.

I can only handle homemade pies. Store bought stuff is always waaaaaaaaaaaay too sugary for my palate.
 
I've never been a cake fan. My grandmother spoiled me on homemade pies.

If I eat cake at all, it's gotta be something more like carrot cake.

I can eat spice cake or carrot cake, but it's not my favorite thing in the world.
 
Kati has a scone recipe that she gets browbeaten into making every time she visits her family. They enjoy it so much that they even tell her to bring a jar of double devon cream along to go with them. If I remember, I'll ask her for the recipe and post it.

Actually the best Scones I've had recently are from Au Bon pain. They have an orange scone that's fucking amazing, as well as a Creme la fleur, which is like three cheese danishes covered in powedered sugar and baked into one.

Well they're good. Wish I had a camera, because they're pretty. There were so many that I'm now having to drive to relatives' houses and give them platefuls.
