I check www.freeappalert.com daily to see what apps are lowered to free (2 days ago, Puzzle Quest chapters 1 & 2). I mostly use mine as a portable gaming device, though I picked up some free science apps, like periodic tables and star charts. I rarely twitter myself, but I like the app to see what people (I follow) are saying.

Fieldrunners is a must. Great time waster. I have tons of apps, but in the end I really only play a few games and have some weather apps/movie time apps, that sort of thing. I do lots of browsing though. If I think of anything specific I'll chime in again. Any kind of app in particular you are looking for?
Looking at that post there are a few changes I would make. Tweetie2 is now just Twitter and still very much worth the download (especially since it is now free). I bought the full version of TODO and am not disappointed.
not even being midway through the MLB season MLB at Bat 2010 is very much worth a purchase, if you bought MLB.tv it is a no question must buy.
Plants Vs Zombies is an awesome, slightly different take on the tower defense mechanic. Highly recommended and fun. There's a free lite version, I think, but the paid one is totally worth it if you love the lite version.
iXPenseit is a great way to keep track of your budget on the go, and it exports to your compy if you need it.
Assuming you frequently have Wi-Fi:
Yelp is always useful.
Blizzard Authenticator is useful if you play WoW (or plan to play SC2).

Bump may work on the Touch, I dunno. Great to get contact info from other people who also have iWhatever devices.
