Escaflowne, nice.

If you don't mind low quality animation the original Gundam is pretty good, actually made me feel bad for some of the guys on the other side, none of the other Gundam series have. Or for better animation there's Gundam 8th MS Team, which is Romeo and Juliet like and recaptures some of what i liked about the original Gundam.

Other then that can't think of anything else right now...

Some of this might be stuff you've already watched, but eh.

I didn't see any Yoshitoshi ABe. Haibane Renmei is slow-going, but I think it's worth checking out. If you don't like the 1st episode, then you can stop there without worry, 'cause you're not going to like the rest of it. I've also heard good things about Serial Experiments Lain, although I've yet to watch it. I should warn you, these are out of print, and the leftover box sets run around $150 new. On the plus side, there are streams aplenty to check out.

Also didn't see any Makoto Shinkai, so maybe Voices of a Distant Star? Short, and since he pretty much travels the same ground in all his movies, you'll know whether it's worth checking the rest of his oeuvre.

Zegapain, an overlooked (and largely forgotten, it seems) mecha show that I thought was pretty good.

Ramen Fighter Miki, an energetic comedy which is honestly nothing really special, but which I enjoyed a lot. It's also like $10 bucks nowadays.

Maria Watches Over Us, a slow-paced shoujo show; this isn't something I expected to enjoy, but damned if I didn't get sucked into it. There's like four seasons of this, just so you know.

Kino's Journey, another good show from back in the day. Definitely worth checking out IMO.

Oh yeah, Kenichi: History's Strongest Disciple. 2 seasons of shonen fighting goodness. Ending kinda blows (the manga's ongoing), but it's a fun show.

Ramen Fighter Miki, an energetic comedy which is honestly nothing really special, but which I enjoyed a lot. It's also like $10 bucks nowadays.

Didn't see Cromartie High School on there. Surreal high school comedy about an average guy who goes to an all-boy high school filled with delinquents. And a gorilla. And a robot.

Darker Than Black, starts off kind of slow, but it gets better.

NANA is really amazing, saw it at a friends, I REALLY WANT PARANOIA AGENT BUT IT IS SUPER EXPENSIVE NOW!

Genshiken, a series about college-aged anime geeks as they do geeky things. It's a lot better than that sentence makes it sound.
Noir, extremely violent, bloodless anime about two female assassins. One has amnesia and they're trying to uncover her past. End up running into an ancient secret society that controls everything.

Have you seen Vexille?
And my fav anime is Saber Marionette J. (Lime is too cute!)

Chibi Vampire is kind of cute... all the episodes are on YouTube. The story is a little bit like Twilight in a way, though.

Well, Twilight in a nutshell is, "I wanna be with you but your blood is so tasty that I just want to eat you."
Chibi Vampire in a nutshell is, "Your blood is awesome and gives me nosebleeds because I produce too much blood when I'm around you so stay away from me!"
So it's not really like Twilight, but does make me think of it when I watch it.
Two more:

Bleach! :D There are dvds, but you can also stream the series subtitled online.

I will second FMA:B and Paranoia Agent, too. I know you can stream FMA:B, not sure if it's on dvd yet. Don't know about Paranoia Agent though.

its in my to buy list atm, I just havent had guall to lay down the money to pick it up at 50-60 bucks a pop per set.

haha bleach is ok but I do try to just stream/watch/borrow shonen jump titles, as for paranoia agent, you can get it on dvd but its been out of print forever and is like a million bazillion dollars used lol

Not sure if it's on your list, but if you want a cute romantic story, Kare Kano can be fun. Some episodes are a little slow, but most of it is fun to watch.

I enjoy Bleach as a guilty pleasure, and for his character design (Kubo earns his awesome nickname).

But a real recommendation - BERSERK. It's so good I actually started buying and reading the translated manga.
