They had Crepe stands all over the place in Paris -- I guess it's roughly the equivalent of hot dog stands in New York. (Or at least hot dog stands in movies that take place in New York. Never actually been to New York, myself.)
Anyhow, Crepes are awesome, and America needs Crepe Stands.

Maybe I was just unlucky. Paris usually does alright but once you get to the rural parts of France with the rundown shacks it starts getting ehhh. Not unlike hotdog stands, in that regard.
Of course those rural parts of France were my mom's favorite holiday destination. Take that as you will.

The first crepe is for the dog.
That saying is because the first one or couple always come out sticking to the pan.
My mom makes them with a cream cheese sugary filling (kinda like danish cheese) or whatever fruit she feels like putting in. From what I remember you need the pan to be as big as the crepe and really damn hot. She would fry up the crepes and just stack them until she was ready to add the filling and wrap them up.

I made mine with homemade whipped cream and a berry compote. I could have easily eaten bowls of that without the crepes.

I love the crepes they serve at a stand in the Medieval Market. Served with sugar and strawberry jam on a slice of brown paper, it's just a lovely, sugary mess to devour 'em hot.
