It is also rather risky to expand too much. What if after expanding he has to throw out half the day's meat. BBQ cuts are expensive now, same with other poor people's cuts. I get floored when I see fajita meat(skirt steak/London Broil) and Ox Tail costing more than Rib-eye.
It's also to be noted that he started off as a food truck for a few years before even considering buying his small brick&mortar.
I know. We have a kickin' recipe that uses skirt steak, and we used to be able to get our protein for next to nothing. But then some TV or magazine chef has to go spoutin' about what a wonderful thing it is, and the price doubles in five years. Hmph.

I'd imagine that, in many cases, though certainly not all, expanding too quickly goes at the cost of quality (eventually), as the original people/location/source of their power/ingredients can't be exported or expanded unendingly. Expanding slower allows new crops to grow, or new people to learn the proper tricks, or an overseer to check and critique his minions, or what-have-you.
It may also have something to do with Dunbar's number.

After nearly three weeks of getting acclimated to my new job I can honestly say that:
a) having a new job after 4 months of unemployment is awesome,
b) my new job is awesome, and,
c) my new job - when done correctly - is exceptionally, brutally exhausting.
Though it is expected to slow down some come mid-September, when I'll be forced to go back to a mere 40 hours a week, instead of the 50+ that I've been working (and getting paid overtime for) so far.

The new job -awesome- feeling after being unemployed wears off quick if the job really isn't that great. Just ask @ThatNickGuy who, at first, was super stoked to get his most recent job.

Yeah, I know that feeling too - from my last job after a (much) longer stint of unemployment. I'm not concerned in this case. Last time I was working as a Micro-Serf, this time I'm working in the materials department of a very large commercial cabinetry company, as a special projects/purchasing lead, just as we're about to start a 3-year software transition project (my favorite projects to be involved in).
I've had 14 work days so far and no two days have presented the same situations/challenges, and none of them have been boring (as can be seen from the fact that my work-day posting has gone from heavy to virtually nil).

I do think about the garbage man. My wife thinks its weird. But not really because of dunbar's number. Because she figures they should expect broken glass and acid vials in the garbage.
What film did they do?Went to Rifftrax LIVE last night in Baton Rouge! Had to leave town on a school night, but it was totally worth it. The fella had Zquil in the car. I took it and napped til we got home. Not even tired today.
I believe they did Starship Troopers.

I'm not saying the food isn't awesome as I've never had it and can't judge myself, but I do know that it's been shown that you could get a place with a reputation like that and serve pretty much anything and people will rave about it as long as it's better than the Keg. Real herd mentality we as a species have.
That said, if I'm ever in that part of the world, I'll be sure to hit it up because who am I to go against human nature?
On the prices of meat, I hope no one ever figures out how God damn delicious pork butt (blade or apparently boston roast in the US now....wtf?) steaks are when prepared properly and I never have to pay more than 2 bucks a pound for it.

I was just starting to like her too!
My wife and I just got back from Santa Fe for a mini-vacation. We had a great time. We spent a day at Kasha-Katuwe which was seriously cool. We also went to Bandelier National Monument and saw some ancient cliff dwellings. And, ate some amazing New Mexican food which is so much better than Tex-Mex. It was a much needed break.

Due to a weird work schedule this week, I had today off. So I got to spend time with my little Squeaker.
After sleeping in, we played with her new (off-brand) Lincoln Logs before naptime. During naptime, I got to game. After naptime, we noodled about with the Lincoln Logs, went outside and played catch before oppressive humidity and heat chased us back inside. I made my first batch of Rice Krispies Treats EVER with her help (turned out pretty decent! ) She INSISTED that I "fight monsters" (play Minecraft) for a bit, then asked to watch Wreck-it Ralph.
Damned fine day.
