I think it depends very much on which Catholic school, and what their particular policy is.
I went to a private Catholic school for a while, and they didn't care whether you were Catholic or not as long as you didn't say anything during the morning minute of silence in homeroom and stuck (more or less) to the dress code. Only maybe half the teachers were themselves Catholic, and one guy (the world religion teacher) was a publicly-declared agnostic.
