Count me in with another vote for Carcassonne. Fun stuff, that.

Also, get Bang. Bang's a blast, especially if you've got the right kind of quasi-roleplaying attitude.
 
I've just read the rules the English version of Carcassonne comes with (the old ones) and yeah, definitely go with the new ones (they are much simpler).

I recently picked up a few board games since I realized I was relying too heavily on my friends to bring games when I have a game day. The games I got are:

Roll through the Ages -- A resource game using dice, a wooden peg-board and a scoresheet. Only supports up to 4 players, though.

Shadow Hunters -- Can support up to 9 players, is really best with 6 or more. A straightforward game where you try to kill your opposing players, but everyone's identity is hidden at the start of the game. So you have to spend time figuring out who your allies are and who your enemies are.

Kill Doctor Lucky -- Supports 3-7 players. Basically think 'Clue' except you're trying to kill the old bastard.

I don't own it, but I do recommend Catan. I have Carcasonne on the Xbox, and have played the tabletop version as well, and I recommend that also. Dominion is pretty cool, if a bit expensive. There's also a Cranium card game called "Ziggity" which is a fun little side game.
 
For borderline rpg but still board game feel try and get your hands on FRAG. It is quite amusing. I even have the themed expansion pack by that webcomic made by steve kuntz.

Or for card games, try and get Lunch Money. An all out street fight/ brawl, played with card games. 3-4 players is a pretty good game, more than that and it turns crazy, backstabbing alliances left right and center.
 
Just got a game the other day called Agricola. You play a 17th century farming family and you have to grow your farm with an infuriatingly few number of actions so you need to be very careful with wasted actions. It's pretty tricky to pick up I got lucky with the game store near me having one that they just got in, he says it's out of print but I played one game last night with friends and fell in love with the game.

For gameplay it seems like it would be impossible to truely master it but it's a fun game.
 
I also picked up this one card game from Fantasy Flight games called "Chaos Marauders" which is based on Warhammer.
It's played with 2-4 players and the goal of the game is to create 3 battlelines of 4-12 cards. Each card represents a troop, loot, or war machine. There are also special event cards that often require some kind of roll from the CUBE OF DEVASTATION! Or just "die" if you're a wimpy git (actual line from instructions). Players take turns drawing cards from the deck to create their armies, only stopping when certain events occur and then turn goes to the next person. Once a battleline is completed the owner can attack another player's incomplete lines should he wish.
It's a fairly simple game, and can easily be taught to others through playing.
