So, I put the systems side-by-side in a real-world test today.
Ripping some blu-ray off my shelf and into my Plex.
Ripping speeds are constrained by the speed of the DVD/Blu-Ray, so no performance change to note.
Transcoding, on the other hand, is a big difference...about 35-39 frames per second on the old machine. About 240-245 frames per second on the new machine, so 7-ish times faster. That's significant improvements in a regular-use task.
