It is that way in the books as well, but considering there is a time limitation the Bolton Bastard gave them, you'd think she'd be in more of a hurry than to sail all the way around the continent.I am not sure how different it is in the book but....
The Iron Islanders seem to be more proficient at naval/ skirmish combat or that is what I have gotten from the show. Even if they did take Moat Cailin they would have to trek across land without supply lines in an area pincered between The Freys and the Boltons via a means that does not play to their strengths. By attacking via sea they can more readily flee once they have Theon or escape if overwhelmed. Also they will be coming at an angle that the Boltons won't expect. Considering Balon Greyjoy was given the ultimatum to release the captured lands or get more 'gifts' the Boltons would expect Islanders to either retreat or put up a fight to the west not come around and attack from the east.
Of course the downside to the plan is the journey distance and time. Whether Theon would be alive or remains still intact is a gamble.
