Even though they ran out of time for an ending, I still like KOTOR2 more than 1. The story is much more engaging, and they really delve into the more mysterious sides of the force. Also, Kreia is just an amazing character.

It wasn't budgetary, it was time. LucasArts pushed the release date up to match up with one of the prequels.I'm a huge fan of KOTOR 2. I think it's the only game I've ever finished in every possible way (dark/light/grey consular/guardian/sentinel male/female). I also absolutely agree that you should always play a game modfree first.
However, KOTOR 2 really is the only exception to that rule. The restoration mod does add one or two parts which, to me, are superfluous, but it mostly fills in stuff that's already included but unfinished for several reasons - mostly budgetary. And it solves a lot of bugs - especially the crash- and rendering game unwinnable ones are sort of important.
Lastly, he's posted already that he already has finished the game, so it's not an issue.

I loved the Heretic series.I would really like to see a return to single-player KOTOR as well. I played the MMO and it really only flirts with the storylines of the 2 predecessors. Problem is, EA owns Bioware now. So, I'd want some other company to pick it up. Not sure if that is going to happen.
What I'd want is for the original Bioware people to make another RPG. I really enjoyed both KOTOR 1 and Jade Empire, so if we could get those same people to make a new RPG, I don't really care what IP they use. I'd actually like if they came up with their own new one.
Other than that, when I first saw this thread, I though of Heretic. It was one of the first FPSes I ever played and still holds a spot in my heart. If we can get a new, proper sequel to that, it'd be awesome.
