Not just obvious stuff, like not being able to view replies, and not having search functionality, but subtler stuff that may not be obvious, like how it'll only show you highlighted tweets from an account. If you're not logged in you may not see their most recent tweets someone has made, you won't be able to see most of what they've tweeted, and it won't give any indication of how much recent content you're not seeing. The block button used to be a six-inch high fence. Since X has steadily upped their efforts to force people to log-in, the block button has become more substantial.
