I'm really proud of this chicken stew. I wish I could take a picture! Man, I haven't made anything this comforting in a while.
 
I'm making breaded chicken breasts, and oven roasted garlic cauliflower and sweet potatoes.

I so rarely cook so this feels like a big deal.
 
Just dicing 'em into bite sized cubes and tossing them in some pepper and olive oil. Bakin' 'em.

They were good.

I mentioned at dinner that you make sweet potato pie. That generated some interest.

That sounds awesome. And if they want a recipe, I'd be glad to oblige. Although you know me, I'd be guessing with measurements. :p
 
Penne pasta conglomeration. No idea what else to call it, since it's basically "Nick throws a bucha stuff together and mixes". So, we've got:
-Whole grain penne pasta
-Red & white kidney beans
-Steamed & chopped up brocolli & cauliflower
-Pieces of fried chicken (garlic fried with chicken and sprinkled with pepper)
-Small bottle of alfredo sauce

Y'know, I'm feeling a little bashful when hearing what fine cuisine you fellas and Cajungal are making ;)

Me, I usually make one of these:
- Chicken risotto
- Spaghetti carbonara
- Spaghetti bolognese
- Pea soup/spinach soup out of a can
- Chicken stew.

Nothing so fancy...
 
Y'know, I'm feeling a little bashful when hearing what fine cuisine you fellas and Cajungal are making ;)

Me, I usually make one of these:
- Chicken risotto

- Spaghetti bolognese
- Pea soup/spinach soup out of a can
- Chicken stew.

Nothing so fancy...
It's better than my usual:

- Toast
- Sandwich (roast beef or tuna salad if I feel fancy)
- Canned soup.
- Microwave burritos.

Et cetera.

Oh, I rarely get to cook what I want, Here's what I can usually afford to make, both time and money-wise:

-lentils and rice
-red/white beans and rice
-canned soup
-baked chicken
-sandwiches (but really really good ones)

It's a rare treat to cook something special and fancy. Like over the holiday I got to poach pears in white wine. I NEVER GET TO POACH!

Sausage & Chicken Gumbo, Chicken Quesidillas, Pigs in a Blanket (Lil Smokies Sausages wrapped in biscuit and baked), chips, dips, queso dip and whatever we may create in between all the other stuff. It's gonna be a party!
