Whats for Dinner?

Roast chicken and mashed potatoes with a random medley of vegetables I had left on the side. DEFUCKINGLICIOUS.

I successfully made a homemade cheesy soup! It is really yummy. But so rich I could only eat a third of a bowl. I have lots of leftovers haha.
 
Greek Saganaki (fried Feta cheese) served with a side order of Brazilian white rice and Balsamic Glazed Carrots.

I'll assume this is for 2 people as a big side order.

Prep time is about 15 minutes and it's quite simple.
  • 3 cups baby carrots (room temperature)
  • 1.5 tablespoon olive oil
  • 2 tablespoons balsamic vinegar
  • 1 tablespoon brown sugar
- Heat the olive oil in a large flat skillet over medium-high heat (I used 7 on mine).

- Once hot enough saute the carrots with the oil for about 10 minutes making sure they are all equally being cooked at the same time. After the 10 minutes quickly check to make sure that they are tender.

- Reduce heat to medium (I use 5) and stir in the balsamic vinegar and brown sugar, mix to coat for 3 minutes.

- Take off heat and serve. Expect facial reactions like the one in my signature.

Dinner? What's that? Thanks to "kidney stones" drama being code for "I quit", I've been living off of Red Bull and pepperoni rolls covering the extra shifts.
 
I am, frankly, ashamed for what I had for dinner. 4 pepperoni sticks, 2 pieces of cinnamon sugar toast, and a good stiff bourbon. It was a hell of a day, and I just couldn't bring myself to make dinner.
 
Nothing makes me happier than to cook a great meal after a hard day. Especially when my significant other has had one herself.

I made enchiladas but my attempts to make them less rich failed. They are too creamy.
 
It'll depend entirely upon what time I get out of work and get home, but if I can get home early enough, I'm making pot roast with roasted root veggies and potatoes. It took forever for summer to get here, and it was a glorious summer indeed, but fall hit like a sack of bricks and we've a possibility of snow in the mountains this weekend. It was 90 degrees last weekend, and there's a possibility of snow this weekend, tell me that's not messed up. Regardless, it's definitely time for rich stews, hot soups, and roasted meat.

HOWEVER! Soon, I shall be implementing a recipe given to me by a buddy Down Under, for Lasagna Pie. It sounds fantastic, as well as having much potential for Spur-of-the-Moment-Tweaking, for which I am known to make work. Mmmmmm....
 
Oh man, Lasagna Pie sounds awesome. Makes me crave spaghetti pie (which in our family means a "bottom crust" made of cooked spaghetti noodles, egg, parmesan, and butter, baked in the oven with a "filling" of meat sauce and a "top crust" of shredded mozz).

Every time I see your sig at the bottom of your food posts, I want to mirror it. "Augh! Why can't I have food like that?"
 
Honestly, the hardest part of replicating Jay's stuff is probably going to be finding some of the stuff needed to make it at a reasonable price. You may need to go to a more upscale supermarket than normal, especially if you want quality Feta.

Personally, I can only do one dish really well from scratch (Sesame Chicken) and even then I don't fry the chicken like your supposed to... I just have bad experiences with frying stuff on my own (and the burns to prove it.)

Jay, the Croque Monsieur is just a sandwich fried in batter, right? I've heard of them, but it kinda reminds me of the Luther Burger...

Indeed, Feta isn't cheap but we get a nice piece for $5. Nothing imported or anything as they tend to be near 10$ for slightly better flavor.

As far as cooking, I went to a few cooking courses and I'm quite comfortable cooking many meals. Most of this stuff is the easy beans, I tend to take it light in the summer. Lots of meat before winter comes. One of these days I'll show you my Sesame Beef recipe. It's well known in my circle of friends. :)

The Croque Monsieur is pretty much that. A cheese ham sammich with some choice condiments to make one's mouth explode in flavor.

It's very easy to do Fiz, just took me 20 min.
I didn't mean that I wish I could make it, I meant that I wish I could eat it.

I'm missing food right now because I've had to cut back to very basic, easy-to-digest stuff because my GI tract isn't healing fast enough. I've been eating a lot of soup with soft vegetables. No grains, no mushrooms, no raw veggies, and very little fruit. It's a little monotonous, but hopefully doing this for a few weeks will allow for faster progress with my health.
 
My biggest problem with cooking my one good dish is that it everyone else complains about the smell I fill the kitchen with. Well that's what happens when you use fresh garlic and chili paste people! Not much I can do about it... besides, the strong smell means strong flavor!
