Whats for Dinner?

We had planned on having ham & potatoes. Dinner for 2. Then both of the kids were home. Not enough ham for everyone so the wife cut up the ham and we had scrambled eggs.

The exciting life of an old married couple.
 
....why the fuck haven't I had meat-loaf before tonight?! BY THE DARKNESS- it was tasty. The cheese, the meat, the bell peppers, it was good!
You want to get really wild? Get some thick bread, toast it, and eat the meat-loaf like a sandwich. It's the only way I can eat it now.
 
Any human dignity I once had has been thrown in the trash today because today is the day I ordered a Pizza Hut hot dog stuffed crust pizza.

Tasty tasty chicken and sausage gumbo. My dad makes it soooo rich...
I'm swimming in a river of deliciousness.
 
Tonight was rotisserie Puerto Rican Chicken. Galic, herbs, spices, all blended to a paste, liberally applied under the skin of a whole chicken, then placed on the rotisserie for about an hour (try to keep it around 325 or so) to cook to 165f (I take it off at about 160, to let it rest before cutting) and enjoy. Making Chicken Enchiladas for supper tomorrow, with the leftovers.

Leftover spaghetti carbonara when I got home from the hospital. I probably overdid it with garlic, since I now possess a breath weapon against vampires.
 
I like to try things. Yes it does end up as a lesson sometimes.
I've avoided all main-stream pizza since I went to Dominos with my dad when I was in Elementary School. Large pizza my ass.

Not sure about Dinner, but I did have some awesome Nachos today. They were really messy, so you KNOW it would be delicious!
 
I am absolutely stuffed. I know that I shouldn't have eaten that much, and I knew when I was eating it, I just couldn't put the fork down. Meatloaf with mashed potatoes and "gravy" made from demi-glace mixed with sauteed mushrooms and sherry as well as some sour cream, and butternut squash sauteed and then simmered in chicken stock, with a little bit of parmesan grated on top. I could eat that as a final meal and die a happy man.

Creamy quinoa with steamed kale and a sprinkle of parm, side of hash brown potatoes and sauteed tomatoes. So..... GOOD.
 
I don't know why I don't post here. I cook dinner like 3 times a week and I'm getting quite good. Although I'm a terrible photographer. Like, truly bad. Sigh.

On Saturday I made roast beef with a nice spicy rub, and the sides were potatoes au gratin and asparagus... mm.
 
Made fried rice last night. Was very tasty, and all in all not very demanding of a recipe. The part that took the most time, of course, was cooking the rice. Trying to decide whether to do a meatloaf tonight, served alongside braised cabbage, or stuffing said cabbage. I really, really wish my new cooking text would hurry the hell up and get to me though.
 
Stuffed cabbage rolls with a lemon mushroom sauce, stuffed mushrooms, and baked-ish potatoes (apparently our microwave hates to bake potatoes).
 
Mmmm... ravioli. I wish butternut squash ravioli weren't such a pain in the ass to make. I'd have that tomorrow night. They're more of a weekend food though.
 
I had one, single red apple. I peeled it, sliced it thinly, and ate it.

This is a picture of an Apple.



It is not the apple I ate, but it is very similar to it. I am so full from eating this single apple, I couldn't possibly talk about apples any more.
