Yeah, the one good place we had (out of 20 or so choices) used to be run by one little old dude in the kitchen who made his broth from scratch, including roasting his own beef bones - because beef broth was the only option - and just cook the broth down all day, adding more water when needed, etc. The rest of the menu was good, including the fried apps, and service was prompt and friendly; as long as you went in on weekends. During the week you got bland, watered down broth, crappy apps, and almost no service, so we started only going on weekends. Unfortunately, it looks like everyone else did the same, and now they can't afford to run the place well on weekends either, because the last time we were in on a Saturday the place was dead, the service was horrible, and while the broth was still good, the apps tasted (literally) like dirt.
