That said, and I'm no expert on the series because I haven't been watching it, so I only know what I absorb through internet references, isn't the reason Finn ended up with Flame Princess because Princess Bubblegum thought he was too young for her?
I thought it was because she has a thing for Marceline, personally...

Yes, that is one of the explicitly stated reasons why Finn and PB aren't a couple. But even that's weird, since PB lost mass for a while, and reverted back to being younger. For an episode or so she was acting like Finn's age, even though she's hundreds of years old.
I think the real reason for it is the excuse for why she couldn't date that guy Peppermint Butler kept trying to hook her up with: she's not comfortable dating any of her subjects because it would make her less able to preserve her kingdom. Considering some of the things we've seen her do in the past to protect her power base, this sounds legit. She's practically a super villain at times and the only reason we consider her a hero is because she generally doesn't abuse her power as badly as the other princesses do.
It doesn't help that she's hundreds of years older than she lets on. One of Finn's past lives actually fought against her before switching sides when she saw how bad her own side was.
And yes, she and Marcelene act like a pair of ex's... they can and do hang out but it's clear there is some really personal stuff going on between them.
When I was growing up in Alaska, my mother was leaving early one morning to go to class at the nearby community college. As she walked out the front door, she turned and noticed that my neighbor was hand feeding a mother moose and her calf that had walked up to her door. Anybody who has lived long enough in the area knows this is a bad idea, and the next morning our neighbor found out why. Everyone in the neighborhood got woken up to "THUD! THUD! THUD!" Mother moose and calf had returned, only our neighbor wasn't there to greet them with food again. So mother moose was using her hind legs to try to break her door down to get inside and find some. By the time the cops got there and scared them off, the door had a dozen or so deep hoof marks in it and had been nearly broken in half.
