If the meat is good to start with, you really shouldn't need to cover it up with other things. And you will be rewarded for keeping it simple.the prime rib turned out beautiful. It had an incredible flavor. I only used salt, pepper, and some of my favorite Italian blend for seasoning.
Probably the orange peels, is my guess. Peels/zest is a thing you use sparingly.Either the cinnamon sticks or the clove spiked oranges (or combination thereof) made the wassail very bitter.
