Whats for Dinner?

My wife's out of town, so I took my son grocery shopping and let him pick out dinners for the duration.

He really liked the tomahawk chops we had a couple weeks ago...but the ones that they had at the grocery store today were kind of ridiculous.

 
Good lord! What animal do those come from??
Pig. Those chops were actually two ribs each, un-separated, but I wanted to cook them that way for the ridiculous pics.

Seeing how my son's autistic, it's taken me a little longer to get him to where I trust him to be the slave labor that all parents expect out of their kids. But tonight, the last barrier has been breached.



The boy can do laundry, clean the house, and use the grill. I can finally sit back and take my life of ease.
 
We had hamburgers and hot dogs with corn on the cob. When we moved out of military housing, we got rid of our gas grill and recently bought a small Weber charcoal grill. We toasted marshmallows for dessert. Lily hadn't done it before and Noah didn't remember that he had done it during a camping trip with his class. They both loved the marshmallows. :)
 
To celebrate the first day of Spring, I wanted to make a feast - without all of the trouble of being overly full and having a bunch of food go to waste, so I did a four course tasting menu.

Course 1 - roasted beets with a minted pea puree and fresh goat's milk ricotta (homemade).
Course 2 - pan seared and butter basted pork tenderloin with an apple fennel slaw.
Course 3 - roasted rack of lamb over green lentils and melted leeks with a blueberry-mint gastrique.
Course 4 - green apple sorbet with cinnamon ginger blondies and butterscotch whipped cream.

It was all very tasty... and very exhausting.
 
Dinner party last night left a tray full of lamb curry for us to take leftovers from. Closer to a vindaloo. Right on the edge of too spicy, but didn't go over that cliff. Went great reheated after work with a cold 'Gansett. :D

No fucking clue. We have to go buy something and the wife is crashed on the couch. Might be a Lucky Charms or Ramen night.
 
"Lunch" is going to be more gyudon once the rice is done. "Dinner" will be the leftover rice with Lao Gan Ma. :)

Quotation marks because it'll be at 4 and 8am. :p
 
Sorry, I have to disagree with you, but NOTHING makes an egg mcmuffin yummy. It's just one of those impossible things.

I'm not saying this stuff isn't good, but you're enjoying it, not the mcmuffin.

Hey now, I enjoy Egg McMuffins. My secret? Only eat 1-2/yr.

I had a cooking party with some friends from work today. The menu:

*Cucumber lime mint sparkling water
*Mint pea salad
*Pesto stuffed mushrooms
*Vegetable goat cheese tart
*Customizable chicken salad station
*Asparagus risotto
*Traditional shortcake with mascarpone cheese, whipped cream, and strawberries
 
Is that stuff chili flakes in oil, with a slightly fermented flavor, that's really really spicy, by any chance?
It's spicy, but not overwhelmingly so. It's got a nice smoky aroma and the soybeans give it a crunch.

But yeah, you're pretty much right. I just discovered this last week.

That is my second favorite spicy condiment, behind only sambal olek. The jar I have is incredibly spicy though.

This is my go-to pie crust. I use whole grain flour. I added Asiago and fresh thyme to the flour before adding butter, and I cut out the sugar and added a little more salt. Also, a mixture of iced vodka and water makes a flakier crust.

So while your crust is in the fridge, saute or roast slices of zucchini, yellow squash, and red pepper. I also cooked some thin slices of white onion and roasted some garlic cloves. Make sure your vegetables are just barely tender. Season with salt and black pepper.

Roll your crust into a circle, and spread a layer of goat cheese on the crust, leaving about 2.5 inches bare on the outside. Sprinkle fresh chopped parsley, rosemary, thyme, and oregano on the goat cheese. Arrange the vegetables on top of the goat cheese, and sprinkle with salt, pepper, and parmesan. Fold up the sides of the crust over the vegetables. Brush with egg wash, sprinkle with kosher salt, and bake at 350 for about 20-25 minutes.
