This is my go-to pie crust. I use whole grain flour. I added Asiago and fresh thyme to the flour before adding butter, and I cut out the sugar and added a little more salt. Also, a mixture of iced vodka and water makes a flakier crust.
So while your crust is in the fridge, saute or roast slices of zucchini, yellow squash, and red pepper. I also cooked some thin slices of white onion and roasted some garlic cloves. Make sure your vegetables are just barely tender. Season with salt and black pepper.
Roll your crust into a circle, and spread a layer of goat cheese on the crust, leaving about 2.5 inches bare on the outside. Sprinkle fresh chopped parsley, rosemary, thyme, and oregano on the goat cheese. Arrange the vegetables on top of the goat cheese, and sprinkle with salt, pepper, and parmesan. Fold up the sides of the crust over the vegetables. Brush with egg wash, sprinkle with kosher salt, and bake at 350 for about 20-25 minutes.
