I took the aftercredits scene in Apocalypse to mean Mr Sinister was in the next X-Men movie... they're putting him in a solo wolverine flick instead?
But I thought they were doing Old Man Logan. How is this even going to work?

Sometimes I swear Fox picks X-movies like someone picks Yahtzee: "Okay, put everything in the cup...*shakes cup, dumps on table*...okay, we're going make the movie in the ummm...90's... and it's going to have Wolverine and....Mr. Sinister!"

I like to think that Stan Lee just spends all of his time filming random cameo character scenes, so that even long after he dies they can still pick a new one to insert into each movie.
