The EPIC WIN Thread 2: EPIC HARDER!

Woooo, the fella loved my chicken dish! And I'm about to go bake cookies. Here is the recipe in case anyone would like it:

Stuffed chicken for 2:

-2 chicken breasts, pounded flat
-1/2 cup finely minced onion
-1 tbs minced garlic
-3-4 cups fresh spinach
-1/4 cup green onion
-salt, white/black/red pepper
-paprika
-fresh chopped parsley
-8 oz cream cheese (low fat/fat free works fine)
-butter/oil

Heat a pan (I used cast iron) and add butter when hot. Throw in onion, garlic, and green onions and saute for 4-5 minutes. Add a little more butter or oil and throw in the spinach. Cook until it has reduced. Put in the cream cheese and stir on lowered heat until it is all incorporated.

Take the spinach mixture off the fire and season the chicken breasts. Spread the mixture over the bottom side of the chicken breasts generously. Roll up and either tie or stick toothpicks in to hold. Spread a little bit of butter or oil over the top of the seasoned chicken.

Cook at 400 degrees for about 30 minutes. Enjoy! :D

Woohoo! Heard that one of my teachers was fired. Not sure why, but it probably has something to do with his being a lazy fuck who puts on movies and leaves class without telling anyone he's not coming back, lecturing people on how lazy U.S. students are compared to those in India and the U.K. (while copying stuff from Google and Wikipedia into his powerpoint slides) and ignoring people's emails when asked for instructions on projects.

yeah, we've already made it through one office Christmas party.. We still have a new year's party to get through. Plus all the candy in the stockings and stuff.

Still, this is the time of year where people normally gain weight. If she can keep losing it, she'll be ahead of the curve :)

Probably because in many parts of town there are literally churches every other block. There are so many of them here. We're a college town (CSU Stanislaus) AND we have a rather large retirement community here. The old people trying to drive here make me nuts!

Okay, so I might be exaggerating, but today was an awesome day. I've got a dozen stories of jerkhole clients being unappreciative and/or downright rude about receiving a big pile of free presents for their children and food for their families, but I'm trying to focus on the niceness of the day.

Another day of distribution tomorrow, and Christmas is at it's end as far as I care.

On a side note...I got an interview invite for the PhD program at my top choice university today (UM Ann Arbor). This means I now have a higher chance of getting in than NOT getting in, especially since I've already technically interviewed there.
 
Just got back from a great date with my bride of 21 years. First time in months we've been able to go out, and it was our anniversary to boot. Went and had dinner at Ralph & Kacoo's (cajun style seafood and steak) then went and saw Princess and the Frog and it is a great flick to see.

Yaaaaaay! Love that movie. The Evangeline song was so pretty. :) Hooray for Randy Newman.

I'm here to postulate that Beast Wars Megatron was perhaps the most awesome of all the Megatrons.
 
Got to go to the dentist, which is nice because my front tooth is whole again. Later, went to my mother's school and did the official photo/video for the kindergarten classes' christmas acts and...

CUUUUUUTEEEEEE ^_^ Seriously, 70~ kids singing poetry while rocking back and forth, all smiling in very very cute outfits (this is a new public school, quite a nice new neighbourhood) and oh my god.

Only bad thing was some parents that were crossing in front of me to take their pictures (hey, smart guy, I'm already here [unpaid] doing this so you don't have to... Enjoy your kids through your eyes, not the camera shutter =_=).

This picture pretty much sums up both what I thought and what I looked like during the event.

While awesome (or, dare I say, JAWsome), Beast Wars Megatron pales to the awesomeness that is Frank Welker's Megatron. I'm sorry... you just can't beat the original.


As far as Epic win goes... managed to go today without having to write a report, and yesterday I tore up the carpet in what will very soon be a nursery (following the addition of more carpet). This was after I assembled our new queen-sized bed that is SOOOOO comfy! Ahhhhhh *contented sigh* Life is comfortable right now.
