Whats for Dinner?

Lentil soup with brown rice, roasted tomatoes, onion, celery, garlic, and tons of seasonings. Turned out pretty good. I need something to go with it though. A salad would be nice.

Super simple and cheap.

Hot pastrami and melted swiss, on rye, with some kick ass French ground mustard I bought a the local market.

You'd have to hire Callistarya as a sous chef...I'm not one of these neat cooks..i go crazy in the kitchen, and after the tornado has passed through, there's a disaster area with a succulent dish miraculously sitting in the middle of it.

Damn, where do you all find time for all this awesome food? With us, it's "spaghetti" "baked chicken" "baked salmon" "baked turkey burgers". Anything we can throw in or prepare in advance. I don't know how you guys get these made on a given day.

I make things that have about 20 minutes of prep (chopping and stuff) and then a couple hours of simmering. That way my job's over really fast, and I can be left to my own devices the rest of the afternoon--except for a bit of stirring and poking here and there. I can't cook every day, but I make a lot so I don't have to.
 
Had a Marie Calender's chicken pot pie... was disappointingly dissatisfying :( Either it was cooked wrong or Marie Calenders just makes their chicken pot pies too bland

In the time it takes to boil spaghetti, you can chop some veggies and meat, sizzle them up, and add throw together a sauce. Last night I whipped up a Thai curry that took about 15 minutes (thank you Cuisinart for the prep help). Also, pan-fried or broiled salmon is almost certainly going to be faster and tastier than baked.

This activity can be combined with having your after-work beer/wine for maximum multitasking.
 
I usually relegate one or two side dishes to the ghetto of microwave cooking. That way I can spend more time on the main dish. I recently discovered that those new "microwave and mash" potatoes are freaking awesome. Nuke them for 10 minutes..cook something else while they nuke, and when they're done, throw in some heavy cream, salt, pepper, and butter, and go to town with your potato masher. Voila..instant side dish.

I usually just chuck some good ranch dressing (homemade with yogurt if I have it) in the potatoes and call it done. People rave about how good it is, but damn it's easy.

Something I've been doing recently is reducing the marinades I've used for fish or chicken a bit, then tossing in a bag of fancy salad greens (i.e. not lettuce) and wilting them a few minutes. A bag tends to reduce down to sides for 2, which gets you eating a lot more greenage than you would in salad form.

Spinach wilted over sauteed chicken is really good. And yeah, I end up eating half a bag of the stuff in one sitting. Sprinke a lil feta on there.... NOM.
 
Tonight it was canned corn, served cold straight out of the can. I was stuck at the school doing maya stuff and storyboarding. Been like that a lot lately. trend should continue for some time, as I've got crazy amounts of work to do in order to score myself a co-op placement.
 
I never have the time to make fancy stuff. Which makes me sad, 'cause I love cooking. Instead I'm stuck with meat+veggies+potatoes every day, with some rice dish or pasta like once a week for variation. I mean, it's still good eating but I'd llike to expand my horizon some time. /sigh

Tonight's dinner is kale/borecole mash with smoked sausage.
