Escorts are plenty survivable if you know what skills to use. Rank up a Engineer boff, get Emergency Power to Shields & Engineering Team, get a Med boff for Science Team, and keep an Attack Pattern up constantly. Pop shield bats as whenever you can as needed, rotate shields as needed and balance shield power, should keep you alive long enough for a Crusier to take aggro and/or a Science Ship to dish out the heals.

I'm fairly certain Escorts only have one engineering station. You can't have two Engineering powers, unless one of those comes from being an Engineering officer yourself.

Yea. the escort ship comes with two tactical slots (lt and ensign)

Cruiser has two engineering consoles (lt and ensign)
 
I'm thinking of actually taking the plunge and trying this out.

Something I was wondering, as you level, do you lose your previous ships? Or are you able to maintain a stable of ships over time (sort of like in EvE, or like having multiple toons in WoW)?

You keep your ships. You can amass as big a fleet as your credits can afford.

Do players spec into a ship class (and then have difficulty using ships of a different class)?

Yeah, you can spec specifically into any of the ships.

When you are LT. you put skill points into general ship, once you hit LT. commander, you can add more points to specific ship (i.e. skills) So as a player you can fly anything.
