I had to look it up but I guess Polymorph spells can be dispelled.
Initially I thought that they, like flesh to stone, were irreversible except with another counter spell (stone to flesh or another polymorph).
This info was in a 5e forum. Does anyone know if in past editions if Polymorph could not be dispelled?

Yup: Some spells, as detailed in their descriptions, can’t be defeated by dispel magic.

more importantly is the way Dispel Magic is written:

Dispel Magic :: d20srd.org

Basically, it says that unless a spell or spell effect is specifically called out as being non-dispellable, dispel magic should have a chance of working.

Some spells, as detailed in their descriptions, can’t be defeated by dispel magic.

They have been around since 1st edition, but DMs typically only use them in specific situations like the early game encounter. They are pretty much a one-shot monster.
