So I tried Gravity Falls after the internet wouldn't shut up about it. Meh. It's not bad, but it just seems like your average kid's cartoon. Same characters, same situations. I've made it through most of the first season waiting for something magical before someone tells me I have to wait for it to get better.

Mabel is a terrible person. I've said it before, I'll say it again.
Gravity Falls doesn't "pay off" until Season 2 and what exactly is going on with Grunkle Stan comes to light, but as a whole it's a great series. And yes, @GasBandit and I both agree that Mabel is kind of awful as a person.
I hate anything that doesn't get good until follow up seasons. Odds are pretty high that I'm not going to watch a second season if the first bores me. That is just bad writing and plotting. That said, my standards for what is boring and annoying to watch are probably pretty low since I like anime.

You have some pretty damn high standards for kid's cartoons, or your taste in witty dialogue is radically different than mine. Compare Gravity Falls to something truly "meh" like Disenchanted or Costume Quest, or to something outright bad like Avengers Assemble, and I consider GF to be top tier writing.
@AshburnerX is right that it takes until the second season to start weaving plot lines together and making things pay off in a bigger picture, but the journey there is not average children's cartoon. Pokemon is average. Teen Titans Go! is average. Gravity Falls is above average, at least. Not being more than just a children's cartoon for the first season is hardly a reason to call it average.

I haven't seen it.
Mighty Magiswords is fun, but not deep... and Cartoon Network kind of fucked it over once it became apparent it wasn't the smash hit they wanted. I think they burned off the last few episodes a few months back.

It's silly fun, very much short attention span theater.

Yeah, the second season had a subtle air of despair to it, they did not do everything they wanted to do.
Scooby-Doo and Guess Who?
Remember those old Scooby-Doo cartoons that had guest stars like Don Knox and Batman? This is that, but with the comedy and irreverence of Mystery Inc. Way better than it had any right to be, but also faithful enough to the old material that older fans will appreciate the show's homage to it's golden years.

It's not as hardnosed as Mystery Inc... it still FEELS like a classic episode of Scooby Doo. But it's not afraid to do things like have Scooby freak the fuck out or have the gang immediately picking out who they think the villain is. It's self aware that people have been watching this show since the 60's and the formula hasn't changed much since then, but now the characters have fully embraced the utter ridiculousness of their lives.
For those interested, Young Justice Season 3 is back for the later half of it's season. Episodes on Tuesdays.

This one is fucking nuts. I can't say anything about it without ruining the central conceit of the episode, but it's even better than the first. This almost feels like a PG Mike Tyson Mysteries because of how fucking crazy it is.

Elementary, My Dear Shaggy! (Ep4)
Daphne is WAY more fun and kooky in this series. She busts out in full cockney at one point. At another point Shaggy admits he has no pride, after dumpster diving for an uneaten hamburger... which he chases a rat after later.
My god, I fucking LOVE this show. It's the pure distillation of everything I loved about both the classic show AND Mystery Inc.
Ollie Ollie Come-in Free! (Ep5)
Ricky Jervais calls the gang in to solve a mystery when a giant cat mummy ransacks his apartment. His performance was a bit... forced. Like, Wanda Sykes did better in her episode.

12 Forever starts off SOLID, can't wait/hope for a second season(as Netflix is BARELY advertising it).
