Whats for Dinner?

Theres a Missouri-based pizza chain called Imos. I have been going to school here for 4 years and decided to give it a chance tonight.

I had no idea that one can make pizza taste so awful, but by gum they did it.
I thought the same until I went to a local pizza joint in Idaho when I was driving through.

Ranch "sauce" on nearly all their pizzas. The locals were scarfing the stuff down. I could barely stomach it.


And I've had ranch-based sauce since on pizza, and it was OK. This place just did it horrifically.
 
Today was our huge "everybody birthday" celebration. It's become a tradition when my parents visit. I decided we should make it a luau since last year was an Earth Day theme. I made crockpot kalua pork. We had macaroni salad, roasted asparagus, and a green salad. Plus there was cake and ice cream for dessert. Since this was our luau at home one of the flavors of ice cream was haupia (a type of coconut pudding served at traditional luaus). It was all so good!

Spam fried in bacon fat, tossed with creme fraiche, sugar snap peas, and saffron pasta. I call it WASP / foodie fusion. I'm considering adding American cheese to the leftovers when I microwave them.
 
Spicey pulled pork box-ti and hot wing potatoes. They're like hot wings, but the batter is covering mashed potatoes. I am pretty sure that's not the term for them, all I know is they were freakin' delicious.
 
Was missing the taste of Texas tonight...made chicken fajitas with refried beans and rice.

Unfortunately, my wife made me use the Old El Paso spice packet, because she said "I just like them better sometimes." Turns out, it was just nostalgia talking, because after her first bite she declared that my own spices were superior.

Lunch, not dinner, but still:

cook up some soba noodles


Cool under running water and let drain. While it does so, mix in a bowl:

  • 2 eggs
  • about 1/2 tsp each ginger paste and red chili paste
  • dash of galangal
  • dash of curry powder
  • 1tsp minced garlic
  • splash of sesame oil
  • splash of red cider vinegar
  • some salt and pepper
Dump in noodles and mix gently.

In a pan, heat some butter (or ghee, my favorite). Fill a ring mold about half-way full of noodle/egg/spice mixture.



After 90 seconds, remove mold, flip, and cook 90 more seconds. Add cheese at this stage if you want it.



Makes about 6.

I made some really good smothered okra and tomato over rice. They were almost out of homegrown okra at the store.. I got the very last half pound. So gooood.

Braised Moose roast in pan gravy on top of egg noodles with a side of carrots:

Yes it was good. The moose meat came from our neighbour.

In about 5 minutes. It's rare. You don't have to ask.

Even a cheap-o flank steak can be tasty.
 
I love flank steak. It's a great tasting cut as long as you don't overcook it or marinate it for a few hours/overnight. Makes really good fajitas which is what I thought you were going to make until I saw the zucchini.

It was English cucumber.

I love to just make a rare steak out of them since they are very lean and I'm a healthy eating macheen lately.
 
Grilled cheese on homemade bread:

I keep forgetting about that simplicity when it's "oh crap, almost dinner, what's fast?" For being fast, and hot, it's surprisingly good.


And personally, I like it with tomato soup, but my wife hates that soup, so I haven't had the pairing in a while. :( She's worth it though.
